Paleo Chocolate Chip Cookies

Do you love chocolate chip cookies more than the cookie monster? If so, you’ve just landed in cookie heaven my friend. These bites of deliciousness are quick, easy and taste like REAL chocolate chip cookies! Your friends and family will not believe these are paleo. Enjoy!

Paleo Chocolate Chip Cookies

Ingredients:

*makes about 30 cookies

3 ½ cups almond meal

1 teaspoon baking soda

1 teaspoon salt
½ cup coconut oil, melted and cooled

½ cup honey
2 eggs

2 teaspoons vanilla
1 ½ cups paleo-friendly chocolate chips

Directions:

Preheat oven to 375F. Line a baking sheet with parchment paper.

In a mixing bowl, whisk together almond meal, baking soda, and salt until no lumps remain.

In a separate bowl, use an electric mixer to beat together coconut oil, honey, eggs, and vanilla until combined. Add in almond meal mixture and beat until fully incorporated. Use a rubber spatula to stir in the chocolate chips.

Refrigerate dough for 30 minutes.

When ready to bake, drop tablespoon-sized dough balls onto the prepared baking sheet, leaving about 2 inches in between.

Bake 8 – 10 minutes or until the tops begin to brown. Let firm up for a couple minutes and then transfer to a wire rack to cool completely. Repeat with remaining dough.

Serve with your favorite paleo nut milk!
